What is thixotropy of suspensions?

In this new “One month, one lab” video, Julie Goyon and Anaël Lemaître, researcher at the Navier Laboratory, present their research work on the physics and physical chemistry of materials and their applications mainly to civil engineering materials, like concrete. For this, they reveal the amazing properties of thixotropic materials (concrete and ketchup!) and the optical tweezers device that allows to study them.
